Elderberry wine

Elderberry wine (Dessert, Sweet)

Ingredients:

leaven from tokaj or universal yeast
900 g elderberry fruits
900 g blackberries
114 g dates
450 g plums damascenek
potassium metabisulphite
227 g of fine sugar
3 mg vitamin B1
285 ml of apple juice (no preservatives)
1 flat teaspoon of medium
1 flat teaspoon of pectolytic enzyme
1/2 liter of red grape concentrate (difficult to buy); may be concentrated juice (no preservatives) possibly sugar syrup

We wash the fruit thoroughly, from plums we remove the seeds. Pour the whole into a bucket, pour 2,8 liter of hot water, add potassium metabisulphite, cover and leave overnight. Then we add the sugar, vitamin B1, apple juice and nutrient medium. Top up with hot water to the volume 4 Litres. When the temperature drops to 21°C, we add enzyme and yeast. Set aside for 3 Days; we do not forget to mix every day. Pour the grape concentrate and set aside for the next 2 Days. We pour the wine into a gander and clog with a cork with a fermentation tube. Every time, when the specific gravity falls to 1010, add after 142 ml of syrup. When the yeast stops working, remove the wine and add so much syrup, so that the specific weight of the drink reaches 1030 Units. Wine is aged in gander for a minimum 6 Months.

Remark: If the fruit is too sweet, add a little acid.
