Fig wine

Fig wine (Sweet, Reinforced)

Ingredients:

Madeira yeast leaven
680 g dried figs
680 g Sultan
680 g of fine sugar
2 flat teaspoons of citric acid
3 mg vitamin B1
1 flat teaspoon of pectolytic enzyme
potassium pyriosulphite
1 flat teaspoon of medium

Wash the fruit thoroughly and grind with a small amount of water. Pour the pulp into a bucket and add sugar. Pour 1,7 liter of hot water and mix thoroughly. When the temperature drops to 21°C, add acid, vitamin B1; pyrosulphite and enzyme. Cover and set aside. After 24 for hours we make up with lukewarm water to the volume 4,5 Litre, add nutrient medium and yeast. Leave the mash on 4 days and daily we mix. Then we pour into a gander and clog with a stopper with a fermentation tube. Again we set aside in a warm place and wait, until the yeast stops working. Then we pull the wine into the gander and add potassium metabisulphite. Before bottling, sweeten to taste and leave on 4 Months, to mature.

  1. Mam drzewo figowe i chciałabym zrobić wino ze świeżych fig . Jednak nigdzie nie znalazłam przepisu jeszcze . Czy ktoś ma pomysł ? Lub próbował ? Bo może nie robi się ze świeżych w kwestii smaku ?
