Wine from figs, dates and raisins (Sweet, Heavy, Reinforced)

Ingredients:

tokaj yeast leaven
227 g wheat
227 g figs
680 g dates
450 g raisins
900 g of fine sugar
1 flat teaspoon of pectolytic enzyme
potassium metabisulphite
1 heaped teaspoon of citric acid
1 flat teaspoon of malic acid
1 flat teaspoon of medium
1 flat teaspoon of amylase
3 mg vitamin B1
possibly sugar syrup

Rinse and soak the wheat throughout the night in 1/2 liter of water. The next day we cast. We wash the fruit thoroughly, grind with a small amount of water, pour into a bucket and add wheat. Pour sugar, pour 1,7 liter of hot water and mix thoroughly. Make up with cold water to the volume 3,4 liter and add potassium metabisulphite. Cover and let stand overnight. Pour 1 liter of hot water, and when the temperature drops to 21°C, throw in the remaining ingredients. Set aside for fermentation on 5 Days. We mix every day. Then we pour into a gander and clog with a stopper with a fermentation tube. Set aside in a warm place for further fermentation. When the yeast stops working, we download wine. We will get a strong liquor, which can be sweetened with syrup (portions after 142 Ml) with each download, until the specific gravity falls to 1006. The wine will then acquire a beautiful golden color and sweet taste. The liquor should be drunk after 6-9 Months.
