Date wine (Heavy, Sweet, Reinforced)

Ingredients:

madeira or universal yeast leaven
900 g dates
450 shredded bananas
450 g of fine sugar
potassium metabisulphite
2 flat teaspoons of citric acid
1 flat teaspoon of medium
3 mg vitamin B1
1 flat teaspoon of pectolytic enzyme
227 ml of concentrate of light grapes
possibly sugar syrup

Dates are thoroughly washed, cut and together with bananas throw into a bucket. Add sugar and 1,7 liter of boiling water; Combine, until the sugar dissolves. Add potassium metabisulphite and leave overnight. After 24 for hours we make up with warm water to the volume 4 Litres. When the temperature drops to 21°C, add citric acid, medium, vitamin B1, pectolytic enzyme and yeast. Leave the mash on 5 Days, not forgetting about the daily mixing of ingredients. Set aside for further fermentation, from time to time add after 142 ml of syrup, until the specific gravity falls to 1006. When the yeast stops working, remove the wine and add potassium metabisulphite. Liquor can be drunk after 4 Months.
